Picking and Processing.
Olives
are handpicked with facilitating machinery (reeds...).
On the same day of
the picking they are cold-pressed in the farm oil press with
mixing machines and presses. Olive oil is then stocked in stainless
steel containers and after several decantings it is put up for sale without
being filtered.
Such a system allows to obtain an extra-virgin olive oil with the organoleptic features that only the soil and the generous sun of Sicily are able to produce...
